It’s healthy, delicious, a little exotic and even gluten free when prepared with shown ingredients.

Work with what you have on hand. I also like the leftover chicken and vegetables served cold on a bed of mixed greens with store bought ginger dressing or simple vinagrette. You can have cooked spaghetti on hand and toss it with the chopped chicken and vegetables directly on the EVO for a “faster than take out” very crowd pleasing lo mein. Vary the vegetables cooked alongside to include what’s in season- zucchini, eggplant, corn, and fennel are some favorites at my house. Maybe try Quinoa as a base instead of rice. Vegetarian friends coming over for dinner? Simply add a bowl of firm tofu alongside the chicken and marinate then grill together and serve any of the suggested ways. SESAME GINGER GRILLED CHICKEN RECIPE
6 BONELESS FREE RANGE CHICKEN BREASTS OR THIGHS IF PREFERRED,SLIGHTLY FLATTENED WITH MALLET FOR EVEN COOKING
2 CLOVES GARLIC CHOPPED
2 T HONEY
2 T DARK TAMARI (GLUTEN FREE) OR SOY SAUCE
1/4 C HOISIN SAUCE(LOOK FOR NO WHEAT IN INGREDIENT LIST FOR GLUTEN FREE)
2 T DARK SESAME OIL
2 T GRAPESEED OIL (OR VEGETABLE)
1 T CRUSHED RED PEPPER OR TO TASTE (WE LIKE 3 T=SPICY !)
1/4 TOASTED SESAME SEEDS
1 BUNCH SCALLION- 2 DICED AND USED IN MARINADE WITH THE REMAINING CHOPPED IN THIRDS AND GRILLED ALONGSIDE
2 IN PIECE GINGER GRATED OR CHOPPED FINE (CAN USE LESS IF YOU WANT LESS INTENSE FLAVOR)
HANDFUL OF FRESH CILANTRO OR THAI BASIL LOOSELY CHOPPED-HALF USED IN MARINADE HALF TO FINISH WITH DISH
1/4 C CHOPPED PEANUTS TO GARNISH
SLICED PEPPERS TO GRILL, TOSS WITH OIL AND 2 T MARINADE (WE USE WHATEVER WE HAVE ON HAND- BUT LOVE A MIX OF POBLANOS, REDS, AND BANANAS)
RINSE CHICKEN AND PAT DRY. FLATTEN TO A MORE UNIFORM THICKNESS BY SLICING OR USE MALLET. COMBINE MARINADE INGREDIENTS IN BOWL AND PLACE CHICKEN INTO BOWL. FOR BEST RESULTS ALLOW CHICKEN TO SOAK UP FLAVORS 30 MINUTES. TURN EVO GRILL TO MEDIUM AND ADD VEGETABLES FIRST. AFTER 5 MINUTES ADD CHICKEN WITH MARINADE SHAKEN OFF. TURN AFTER 4-5 MINUTES AND BRUSH RESERVED MARINADE ONTO TOPS OF TURNED CHICKEN FOR CARMELIZING WITHOUT BURNING. COOK UNTIL CHICKEN IS FIRM AND INTERNAL TEMP REACHES 170 DEGREES-WILL VARY WITH SIZE AND TYPE OF CHICKEN. ALLOW MORE TIME IF USING THIGHS.
REMOVE FROM GRILL AND LET REST 5 MINUTES BEFORE SLICING ON BIAS ON CUTTING BOARD. SERVE AS IS OR IN RECIPE.
